Topped with perfectly seasoned fried tofu, spring onions and carrots. Nicole will show you how to prepare the tofu to achieve the most from this versatile ingredient. This recipe is so perfect for those comfort days and when that pesky Scottish weather dips.

2 nori sheets
2tbs miso paste
Slice thumb of ginger
1 silken tofu
2 portions of soba noodles
Broccoli
6x spring onions
2x tablespoons miso
Soy sauce to season
2 carrots Sliced
Sesame seeds
Optional: dried mushrooms, chill oil, bean sprouts
